Start by preparing the Ratatouille, washing and cleaning all the vegetables and cutting them into cubes. Peel the onion and cut it into thin slices, then finely chop the garlic and add it to the onion. Make a minced thyme, basil and parsley. Now cook, pour a little oil in the pan and add the eggplantes and zucchini and cook for about 10 minutes.
In the meantime, in another pan, fry the onion and garlic, as soon as the onion is withered, add the peppers and tomatoes, cook everything over medium heat. After 10 minutes add the eggplantes and zucchini to the peppers and continue cooking for another 10 minutes. At the end of cooking flavour everything with the chopped herbs.
While you let the vegetables cool down, prepare the cutlets in the oven or in a pan and then serve them hot with the vegetables.
